Question
I have some peppers that have turned red with lines. The same plants have produced good peppers. Why the difference?

Answer
This is a normal part of the ripening process. Jalapenos, like any other pepper, will eventually turn completely red if left on the plant too long. However, unlike bell peppers which get sweeter when red, the jalapenos get hotter. Whether green or red, they are still edible; only the heat intensity changes.
