I lived on O`ahu, and have the most knowledge about this island. I`m limited on the other islands, but can steer you in the right direction.
Experience I'm originally from the Mainland, but was there for 10 years, and we were integrated into the local scene. My wife taught at public school, I paddled outrigger canoes, and my daughter is a hula dancer.

Question My husband and I are thinking of a trip to Hawaii in December with our 1.5 year old.
My husband can swim, I and my toddler cannot. I am not very fond of any adventure sports. I am not sure how my toddler will react to water and any sports.
We are vegetarians, do not eat egg or any meat or any seafood.
What kind of activities can we expect?

Answer You're going to have a difficult vacation. Hawaii is built around water activities and eating. Eating in Hawaii consists of beef, pork and lots of seafood.
While a vegan manu would be very uncommon, Honolulu does have a population of nearly a million, so I suspect there would be somewhere you can find acceptable food. But it will not be cheap.
Not to put a damper on your vacation, but you might think about putting it off until your child is 6-7 years old. It's hard enough to find things to do for the whole family with a baby when you live there, even harder as a visitor.
