Experience
I began cooking at the age of 8 and never have lost the passion. I raised 2 boys who continually brought "strays" home for dinner. Home Cooking - Chicken Francese

Question
I would like to know if I can freeze chicken francese or how long before serving can I make this dish. I am serving 20 people in 3 days from now.

Answer
Sure - you can freeze it if you don't cook it or add the sauce.  You would need to freeze it at the stage where you have pounded the meat and then dredged in the flour and then egg mixture.  At that point - lay it on wax paper covered cookie sheets and freeze.  When frozen remove from cookie sheet and place in a freezer bag.

To cook - you would need to thaw in the fridge.  It doesn't have to be completely thawed - can be about half so still firm.
