Peanut oil is best for pan frying and also soaking the chicken in buttermilk adds a lot of flavor.A lot of cooks also use buttermilk to dip the chicken in prior to the seasoned flour.Also use self rising flour.After coating let chicken rest a few minutes before frying.For thick crust double dip.
