I had an H1b running between April 2001 and April 2007 but I left the US in August 2005. I now have a job offer from the same employer as before. Can i capture the remaining 2 years exempt from the cap ?

To my understanding and as per info provided, you may capture the remaining 2 years but, for it to be cap exempt would depend on whether you qualify for a cap exempt category.
