I have been in the US twice for 80 days with my ESTA on my Luxembourg (EU) passport. (Jan 8- April 2nd & April 19- present) I fear that when the current 90 days is over I wont be able to come back for a third time. So I wish to go back to Europe and come back on my "clean" Irish passport. Will the immigration officer notice that I am the same person? I would enter the US over land from canada to avoid fingerprinting/biometric recognition...

I do not think you can avoid FP/Biometric even when you enter from land through Canada; you may take a chance though.
