Hi Marc

Just a simple question is boiled rice ( as its called in India) same as Par boiled rice ?

Par-Boiled Rice is sometimes called Converted Rice in the West.

It is popular in the SOUTHERN part of India and in the U.S.A.

I cannot account for what is called what and by whom, but

Asians tend to call regular rice "Steamed" or "Boiled"

Par-Boiled Rice requires no rinsing and is much healthier;

especially for diabetics, due to a lowered "glycemic index."
