I had won several short story competitions in Young times, (a magazine for the youth in U.A.E) Also I had written several articles for a student’s newspaper called Campus in the U.A.E.

Subject: Indian Curries

Question
I have been cooking indian food for a while, but I find my curries generally taste a bit too sweet. How can I 'sour' my curries, to take away the sweetness. Also I do brown my onions, but for how brown should they be?

Answer
Hi karen,

Thank you for your  question. Indian curries are usually sour.
Are you using too many onions in one dish? If you use more onions then required, your curry might turn out to be sweet,
Regarding your second question, It depends on as to what you're making, but in general I would advise you to keep them golden. Switch off the gas when onions are almost golden, The remaining onions will change color because of the hot oil.
