Question
I was parked legally on a busy street, however my car was a little too far
from the curb. When I opened my door to get out of the car, my doorwas hit
by a car driving by. There wasn't any damage to my car, but his car's mirror
was knocked off.  He said it was my fault, but he hit me. Who is at fault?

As you describe the situation, you would be considered at fault.
When exiting or entering a parked car, you have the obligation to make sure that your actions will not affect the flow of traffic on the street, since they have the right of way.
