Experience
I few details when I mean "authentic" Italian cooking:
Alfredo sauce, Chicken Primavera, Scapariello? I don't exactly know these...who is this Alfredo guy? Italian cuisine from Italy is quite different than that of Italian/American.
Cappucino's are for breakfast with a croissant. Not for dessert.
I don't know how to build brick ovens to cook my pizza.
I don't know how to grow capers in my backyard.
And, I don't have buffalo's to make homemade mozzarella!
I surely don't know how to press olives to get homemade olive oil!
Italians are not all farmers and peasants! I don't have time to milk the cows after working 8 hours in the office!
I'm not a chef in a fancy restaurant. Please ask me about my homestyle recipes such as that for lasagne, tiramisu, and other things that a real Italian would eat. I'll try to answer as best as I can.

hi!

like most people that e-mail you they are doing a project on italian food!

reading through the different answers has helped me complete most of project.
however i do have one last question! i have 'googled' italain recipies and have got too many anwers!
i need to make a menu of traditional italian food but dont know what to put in it!
i was hpoeing maybe you could help by giving me a few recipies or names of different recipies to make my traditional italian menu!

Hello Holly,
i think you already looked at the "already answered questions" where you can find different italian recipes.
A traditional italian complete menu includes appetizer: fresh cold meats as ham, salami, bacon, coppa, bresaola, etc with some veggies under oil or under winegar (called sottoli or sottaceti) and bread sticks.
Then it comes pasta or rice as a first course.
Traditional recipes for pasta are: lasagne, pasta all'amatriciana, pasta alla carbonara, pasta al ragł... just pick up the one you like most. We have THOUSANDS of traditional dishes. Then we have meat or fish with a side. Traditional meat dishes are: pollo alla diavola, alla cacciatora, scaloppine al limone or al vino bianco, roasts... Fish that are most often eatean are: sogliola (sole), merluzzo, pesce spada (sword fish), etc. As a side most people have salads that in Italy is usually seasoned with salt, olive oil and/or winegar only. No sauces.
Otherwise we serve roast potatoes, grilled veggies...
After this you can have a selection of different cheeses (fontina, asiago, parmigiano, scamorza, provola, etc) and a dessert (tiramisł is the most famous one). Then a caffč espresso and a liquor to digest everything. A very common liquour is called limoncello but other names are: Averna, Sambuca, Amaretto di Saronno, Montenegro, etc.
