What is the typical male/female ratio.

Which hedonism resort may be best for a late 40's couple, physically active, not currently swingers but may be interested

Answer
I would suggest Hedonism II.  This resort typically has a crowd from their 30's on up, with the majority in the 40's plus.  This is due mainly to the fact that a large portion of these 40 and 50 year olds have been coming to this resort since it opened, and they have "grown-up" with this as their vacation spot.  Don't let the age of the resort make you think the resort is old.  It isn't!  It just went through some major renovations about a year or so ago, and it looks wonderful!  

If you are looking to "play", you should have the opportunity at this resort, depending on the crowd.  Sometimes there are more swingers there than other times.
