Question Hello Jessica,
I am considering eating tofu dishes quite often as I have recently tasted a couple of great tasting recipes. I bought two 1 pound containers,(comes in a plastic container & has some water or fluid in it), at an Interasian market two days ago and I'm wondering how long it will be safe for me to keep it in the refrigerator?
Also, can I freeze tofu without affecting it's flavor, it's firmness, or other qualities?

Answer Hello! I'm sorry I don't have a lot of expertise on tofu, but I've done a little bit of research on it for you.
According to http://www.quonghop.com/whatistofu.htm:
"If you want to store it in the refrigerator (which you can do for up to 7 days), cover with fresh cool water. Replace the water daily to prevent it from getting cloudy and making a good home for bacteria. Also be sure that the tofu is completely submerged.
If you want to store it in the freezer, place the drained tofu in an airtight bag or container. The white tofu, once frozen, will turn yellow; but don't worry, when you thaw it, it will become white again. Freezing tofu drastically changes its properties. When you freeze it, thaw it, and squeeze out the water, it will have a more meaty, chewy consistency and will soak up marinades and sauces more readily than non-frozen tofu."
I've looked at some other places online, and they all say pretty much the same thing.
I think you should take a look at that website; it seems full of information for new tofu lovers.
