Hello Kevin, I've just recently noticed that the fan doesn't turn on when the A/C is running.  It has the viscous fan drive and it does run the fan up momentarily when the engine is first started but then backs down to a very slow spin and stays there.  Engine always stays at 190F, except for this weekend when I replaced the water pump and neglected to purge the block of air. The engine temp was running a little high and it signaled the fan to run high which immediately brought the temp back down.  It did this several times until I was able to purge and add more coolant, so I know the fan and drive work.  

What could I check to make sure the A/C is signaling the fan correctly?

the viscus fan and the electric fan are 2 different things  which one are u worried about?
The viscus one spins all the time at low speed  when u drive it will slow down  it is not needed as much.
The electrical fan only comes on when over the 220 temp or the ac is on.
