Question
Is fungi safe to eat? Is it ok to eat blue cheese or mushrooms because they're technically not plants are they?

Answer
some mushrooms are safe and some aren't. Can mushrooms and mushrooms on pizza, or mushrooms that you get from a salad bar should be ok to eat because those are usually specially grown for eating. Mushrooms that you find laying around are most likely not good to eat. As for blue cheese, same reason above. Only eat ones from stores or restaurants. Besides if it makes you sick, then take it out on the people that sold them or the people that made them.
