Question
The name for stuffed neck in the USA is HELZEL.
In England it is MAGEL. Why is the name different in these two countries?

Answer
There is a difference between American English and UK English.

For ex:

Crumpets and Tea : Cookies and Tea, or whatever crumpets are

English Pound : American Dollar

Scones : Oatmeal Cookies

basically they normally call a lot of things by different names than we do.

Another example. They play cricket we play baseball, although similiar, they are called differently and played differently.

You will find many words different from American English and UK English.
