Subject: Potato flour

Question
What is potato flour?  How do I get/make some?  Some of the recipes for my American-Jewish cookbook want potato flour.  I currently live in a non-ethnically diverse area (in other words not a whole lot of non mid western cuisine ingredients).

potato flour

Also called potato starch, this gluten-free flour is made from cooked, dried and ground potatoes. It's used as a thickener and, because it produces a moist crumb, in some baked goods.
