Question
what exercises/strength training drills will increase speed and pwer in my poke checks?

Answer
Hello,
Think about training the upper body as a whole - balance training is so important.  

Stick with the basics:
Bench Press
Lat Pulldowns
Shoulder Press
Rows

Along with Push Jerks, Push Press, 1-Arm DB Snatch, Med Ball Power Drops, Med Ball Woodchops and a bunch of grip work (farmers walk, towel hangs, plate pinches, supination/pronation, ulnar/radial deviation, etc...)
