Question
how long do you leave the straw on new grass

Answer
You may leave the straw in place provided that it has not been applied too thickly. It is even beneficial to allow the straw to decompose in place because it improves the soil.
If the straw layer is too thick, it can impede the growth of the grass seedlings. You will have to judge. If you must remove some of the straw, use a long-handled rake and a very light touch. Work from the perimeter because you do not want to trample the tender seedlings.
