I think that you are talking about two different things
one is the back set the standard is 2 3/8 from the edge of the door use 2 3/4 most commercial work.
Two is the actual thickness of the door which they are say it is 2 3/4 thick. This is not your normal door which are 1 3/8 or 1 3/4.
Most homes doors would not have what you need. you need really a mortise lock, so you can center it in the edge of the door and you can have a shaft with the correct lenght, when about 4 1/2 inches so you can screw the handles on and if you want to lock it you would have to have a thumb turn on the inside with a long shaft and a key cylinder on the outside and a long lenght.
