Answer Start with Sibelius... it offers a complete package with fairly realistic sounds. If you have more money, check Garritan and use them in a software sampler such as Kontakt. If you want REAL... check the Vienna Symphonic Library. Again, listen to the demos and decide according to your budget. There is also the SAW Project... very real sounds as well... lots of options.
