Question
what is it called when you put a dial indicator on the lathe chuck and spin the chuck while the shaft is in the chuck with the indicator on the shaft

Answer
We just call it indicating the part. Although if you do it the way you describe you will not accomplish much because everything will spin together.

You should mount the indicator on a magnetic base. Stick it on the carriage, then place indicator tip onto shaft. Then when you rotate the chuck the indicator will read the runout of the shaft.
