Answer I still run a completely analog studio. I can only give you a cursory answer as to how to set up such a studio because it really can't be done in a few paragraphs. I actually plan on conducting classes that teach the value of analog set-ups as a precursor to doing digital video work.
Basically, imagine a left to right work flow, the player machines go on the left, the record machines go on the right. After the record machines come the monitors that allow one to view the final result. This flow ensures that anything that is being viewed on the monitors is actually running through the record deck.
In terms of audio, you must be able to run a test tone through your set up and be able to "zero out" the audio levels at each and every connection point that has input capabilities.
