I can answer questions on Bruce Lee's martial art philosophy, Jeet Kune Do. I have been a JKD practitioner since 1973 and an instructor since 1986. I have plenty of resources at my disposal to get you any answer/info you need.

Experience
I have been a student of Jeet Kune Do since 1973 and a certified instructor since 1985. My lineage is directly from Bruce Lee through Dan Inosanto. I have also trained with many other original Bruce Lee students like Larry Hartsell, Richard Bustillo, Ted Wong, Bob Bremer and Pete Jacobs. I have also trained with many 2nd generation instructors like Cass Magda, Chris Kent, Paul Vunak and Burton Richardson. I have operated my own JKD school, Unified Martial Art Academy, since 1986. Question
I have 3 options available to me.
And I unfortunately I can only choose one.
I am 5'7",32 years old in goo physical condition and weigh 160 lbs.
I was wondering which of these you would choose and why:
Muay Thai, judo or wing chun.
I have tried free trial classes and have observed classes as well.
All have very great instructors and all seem fun and interesting.
The only thing with wing chun is, it is not much of a workout and it
doesn't seem to be as live(working with resisting partners/sparring) as
judo and muay thai.
Do you think you can really learn to defend yourself/fight without
"aliveness"?
I am primarily looking for self defense, fighting skills and physical
fitness."

Danny,
Go with the Muay Thai.
Even though it won't have the grappling of judo it will definitely give you the self-defence, fighting skills and physical fitness you're looking for.
Judo will too but you can only apply it in the grappling range and it's different out on the street than it is in the dojo with mats and gis, etc.
