Question
I need to make salads for 200 people using only Compari tomatoes marinated, romaine lettuce with a dollop of dressing.  How many heads of romaine to purchase and how many tomatoes (roughtly will do).

Thanks.

Answer
While I am unfamiliar with the variety of tomatoes you are trying to use I might still be able to help.
I looked on the internet and the closest thing I could get to an average weight of the tomatoes was a picture or two. So having seen them I am going to try and guess how many you will need, keep in mind this is a guess, I have not used these tomatoes before so I am sorry if this guess is off. They look like they are about 2.5-3oz each (from what I saw) if this is correct I would guess that you will need about 100 individual tomatoes. I am not sure what size packages these tomatoes come in, but if they are indeed the size they appear to be I would probably go with about 1.5-2oz per salad. This of course depends on the size of the salad in question. If it is simply an appetizer salad the affore mentioned weight will be correct paired with about 4oz of romaine lettuce per serving. For a meal sized portion I would almost triple those numbers.

I hope this helps please let me know if I can be of further assistance.
