Mass Production Cooking - food quantities for taco

Expert: Chef Glen L. Davis II - 12/2/2008

Question
How much food do you need for 90 people for tacos. Hamburger, shells, sour cream, salsa, tomatoes, lettuce, and cheese.

Answer
The big question is who are you cooking it for? I say this because I have cooked for church groups where people eat hardly anything, alternately I have cooked for my old football team and they ate like they haven't eaten in weeks!

For average eaters I would figure that each person would need about 5-6oz. of cooked taco meat each. This is figuring that each taco will take about 1.5-2 oz of meat each. I also like to plan for 10 extra people, some folks think this is excessive but I would rather be safe than sorry.

As far as shells again I would figure about 2-3 each, with 10 extra portions. Sour cream, about 1 32oz and 1 16oz container should be more than enough. Salsa, about 3 16oz bottles should do it. Tomatoes, probably about 8 medium to large tomatoes diced small. For lettuce, I recommend romaine because there is less waste than iceberg probably 6-7 heads cut width-wise thinly. Cheese, probably 48oz should be enough.

I hope this helps please let me know if I can be of further assistance.
