Question QUESTION: We are catering for about 120 people at a reception at home. We aim to do a cold finger food country tea sort of effort and need at least some of the food to be frozen so we can prepare ahead. So sandwiches that can be frozen and defrosted on the day, ideas for small savouries, small cakes etc. We shall include smoked salmon sandwiches and cucumber sandwiches, small cream scones, small eclairs which we can make on the day. Individual portions that do not require cutlery is the idea. The whole event is to be in our garden in a marquee, and the happy couple have a totally misplaced, albeit touching, faith in our ability to come up trumps! Help!

We are looking for suggestions for sandwiches that can be frozen ahead and defrosted on the day - but we don't know which fillings will take this treatment. Can you give us some suggestions please?
We are looking for simple recipes for tasty finger food that can be prepared up to 12 hours ahead without going stale or soggy.
We are also looking for recipes for small sweet things to serve after the savouries.

What time of year will this event be taking place?
Do you know anyone in the food service industry? If so do they place orders for their place of business? Who do they use and can they order items for you?
Do you have or know anyone who has a "bulk grocery club" membership (i.e. Costco/Sam's)?
Are there any items that cannot be served, such as pork, shellfish or any particular types of fruit or vegetables?
Would you be wiling to purchase items such as 3oz. "shot glasses" for some menu items? (the reason I ask is because you can do some simple soups in said "shot glasses", it will bolster the menu and also give you some diversity and a touch of class without he need for cutlery)
Sorry for the additional questions but the answers will help me to narrow menu options for you.

QUESTION: We have replied - it does not seem to have reached you. The wedding is this summer - July 25th. We have a Costco cardbut no contacts in the catering industry. There are no items that need to be avoided but at least half the guests are very conservative - their idea of "exotic" is pasta - so the soup idea although inspired is not going to fly. We need to keep cost aas low as we can - we are foster carers and have a total of 11 children (including our own - and the bride!)At least we shall have plenty of willing, if not experienced, help on the day.

Answer I will write up a few ideas for you, it may take just a couple days because I am taking full time classes this summer. I should be able to have something ready for you by Saturday or Sunday (I do not currently have internet access at my home so I have to drive about 30 miles to my school or parents house to use it). The most important question I can think of right now is, what is your budget?
