Mass Production Cooking - Turnips

Expert: Tina Addair - 11/25/2003

Question
Hi Tina, do you have a good mashed turnip recipe that you can share? I am preparing Thanksgiving dinner for 12, and have never made turnips before. Thank you for any help that you can offer, regards, Ken.

Answer
Hi Ken!  Here are 2 recipes.  You can pick the one that sounds best to you. Both of them make 12-13 servings. Happy Thanksgiving!

Tina K. Addair

RECIPE #1

6 turnips, peeled and chopped
1-1/4 pounds bacon
1/3 cup rendered bacon fat
3/4 cup brown sugar

Directions
1 Bring a pot of salted water to a boil. Add turnips;
cook until tender but still firm. Drain, and transfer to a
  large bowl to cool.
2 Place bacon in a large, deep skillet. Cook over medium
high heat until evenly brown. Crumble and set aside.
  Reserve bacon fat.
3 In the large bowl, combine turnips, bacon, reserved
bacon fat and brown sugar. Mix together and serve.

RECIPE #2

9-10 large turnips
1-1/3 cups milk
1/4 cup butter
salt to taste
ground black pepper to taste

Directions
1 Peel, wash, and quarter turnips.
2 Boil 35-45 minutes or until tender. Strain and rinse
  cooked turnips.
3 Place in large mixing bowl and use fork to break up
turnips into smaller bits. Add milk and butter. Blend to
desired consistency. Add salt and pepper to taste.
