Question If I soak my pinto beans overnight, putting 7lbs. in each pan, then drain the water off in am, how much water will be required for each 7lb batch, and how long will it take to cook them, once they reach a boil? I'm assuming I need to turn them down and simmer? once they are boiling? Thank you very much for all your help, and since this is a project for my son, HE thanks you too! Penny
Answer Hello again Penny! Add enough water to each pot to cover the beans by 2 inches. Bring them to a boil and boil them for 10 minutes, then turn the heat down to a simmer. You need to keep a check on them, because you may need to add more water as some of the water evaporates (depending on how much "bean soup" is desired in your beans. I can only give you an estimate on how long they will need to cook (that's a lot of beans!), but I would guess about 2 hours if you do the overnight soak. Have your son get a couple out after an hour to see how tender they are, then check them every 30 minutes afterward. Good luck!
