Question
my mother is sick and loves spaghetti but she can't eat tomatoes is there something i can do?

Hello Jennifer.  First off, you might want to check with a dietician or nutritionist.  There may be a category such as this existing on AllExperts.  They might have some ideas I'm not aware of.  

I'm sure you've already considered the obvious option of an alternative pasta dish, such as with an alfredo sauce.  For something that would be closer to a tomato sauce, you could saute some chopped vegetables your mother likes, such as mushrooms, celery, onion, green peppers and even squash.  Then toss these vegetables in a roasted red pepper puree.  You can buy roasted red peppers in a jar at most supermarkets.  Simply place them in a food processor or blender and, with it running on low speed, slowly add some olive oil in a stream.  If you prefer to make the peppers homemade, Place fresh red peppers in an oven set on broil and turn regularly till peppers are charred on all sides.  Immediately place peppers in a paper bag and close.  Let them stand for 5-10 minutes in the paper bag.  This will allow the skin to peel easily off the peppers.  Peel and core them and you're ready to go.  Sorry I can't give you more ideas.
