Hi,
My daughter has a 6th grade project due next week, she has to build a catapult, Do you have any suggestions?

Since the Vikings didn't use catapults, I can't be of much direct assistance, however a few minutes using Google turned up a number of sites with plans for making catapults for school projects. The best of these included:
