hi Jim and Happy 2015!

Can you tell me if it's possible to change the screen color when working in Outlook.
I find that the white screen is irritating my eyes. Is there something in the Outlook program, or maybe in the monitor's buttons, that would allow me to change the screen color?

Yes, you can. Some changes you will need to do in Windows and some you can do via Outlook.
The following link explains what can be changed and where to change it.
Keep in mind that the method for changing the color settings depends on the version of Outlook and Windows you are using.
