Microwave Cooking - The Best Way to Bake Brownies

Expert: Donovan Fandre - 5/14/2008

Question
Hi,

What would be the best equipment to bake brownies? Using Convection Oven, Microwave Oven, or Convection Microwave Oven? And what are the tricks when using this oven to get the best brownies?

I have tried using microwave, the inside texture is good but the surface is not smooth enough. Moreover, some area  raised higher than others that makes the thickness is not uniform. I put the mixture in a round glass pan and used a turntable microwave oven w/o convection.

Thank you.

Answer
Hey Jack, sounds like you did everything correctly for microwave. My only suggestion is to use lower power and cook for a longer time until barely done. It's very easy to overcook and have the brownies dry out and sometimes burn so cook only until the surface is slightly dry. If you use convection it'll take as long in your combination oven as it does in your conventional oven. There are so many variations in combination microwave-convection that I hesitate to offer instructions. I bake my brownies uncovered by it's sometimes advised to cover with plastic wrap for more even baking. Good luck! check my website, jumpstartcooking.com for more tips.
