Question
Hi, how can this be done safely in a microwave..  prevent the egg "exploding"

Answer
Dear David, for my latest cookbook, "Jump-Start Cooking" I cooked copious numbers of eggs to get the timing right for poaching, soft boiling and hard boiling. Thankfully my dogs love eggs so the mistakes were not total losses.
2 large eggs, poached - place 1 cup of water plus 1 teaspoon vinegar in a large coffee mug and microwave for about 2 minutes or until barely simmering. Crack 2 large eggs into the mug and microwave on high for 1-2-minutes or until done as you desire.
4 large eggs, double everything in the first recipe.
Note: since microwave ovens have different power and sizes you may have to experiment a bit to get the timing right for your oven in your kitchen.
