How you should cook rice depends on the type of rice and the power of microwave. Long grain rice can be cooked simply with high until all water is evaporated, or even the water is drained. Short gain rice (Calrose rice), however, must be cooked differently. A general rule is to cook as, first slowly heat up water, then bring it to the boil, and follow it by simmering on low heat to allow all water to be absorbed. It is best if the rice is washed at least 15 min before cooking, in order to allow rice grains to absorb some water.
1. Wash off all starch, or you will have too much bubbling while cooking. Do this quickly with just two change of water, or it is believed that you would loose too much vitamins.
2. Put the rice and 1.5 to 2 times of water in a deep enough container with a lid which allows the steam to escape while cooking. Boiled water may be used. This quickens the process and is believed to help evening out the temperature within the mass of the rice. Sushi rice is recommended to be cooked with boiling water to begin.
3. Start heating with medium heat and, if you prefer, you may stir rice only once when the water is hot but not boiling yet. This evens out the temperature within the rice. If you stir too much, the stickiness will result and it may bubble too much. Traditionally it is not recommended to open the lid while cooking throughout. This may be about 5-10 min if you are cooking 2 cups of rice. However, it depends on the amount of rice and the power of your microwave. If you stated with boiling water, this step would be much shorter.
4. Cook on high to bring it to the boil. 3-5 min.
5. Immediately reduce heat (low or medium low) to simmer and keep cooking until all water is absorbed. 15-30 min.
6. Allow 5 min to stand before you can stir rice.
7. Once you time these steps, you could program the microwave to follow rough times but keep a watch to alter when it is necessary.
