The Middle Tennessee area has tons of fun outings that are educational for the children. Take a look on the Nashville.about.com site in Family Fun, Historical Sites and in the government sites (to find surrounding counties info) and also in the annual events calendar.
Personally I like taking the kids to History Rugby, Bicentennial Mall Park (no bee demos), Ellington Agricultural Center, and also to some of the local folk style festivals.
Our local parks system will be offering over 40 festivals and concerts this year here is a link to their site: http://www.nashville.org/parks/ and Sumner County (http://www.sumnercountytourism.com} offers tons of festivals that also include the 18th century type activities that you are hunting for (a lot of them are held at Rock Castle and Mansker's Station).
