Question I have been looking for a book on finishing techniques for needlepoint canvases, both for mounting for framing and for making pillows. Can you recommend a title that provides details and illustrations?

I often refer people to "The Needlework Doctor" by Mary Kay Davis. It is very detailed, and has pretty good illustrations. I just took a look at Half.com, and they have several copies available in the $2-$5 range. You could also request it from your library.
