Question
I work in long term care as the ADON. There is a debate between the DON and dietary manager (DM) about: hairnets- The DON states it is an infection control issue to leave the cooking area then return with one on, DM says that is not so and the dietician agrees with DM. can you clear this up  with references if possible?

Answer
Hi David,
I was just made aware that I had a question pending.  I'm so sorry for the delay!

May I refer you to the US Dept. of Agriculture on the use of hair nets.  Another organization you may find helpful as they are heavy-duty lobbyists for food safety is the certified sanitarians website.

Food safety is a bit out of my expertise.  I hope you can find a clear answer.  The information I found was based on worker safety and not food safety.  Good luck!
Best,
Sandy
