Organic chia seed (or any other plant or seed) is grown under sustainable conditions - no chemicals in the soil, no herbicides that are chemical, and no pesticides that are chemical.  If a product is grown organically you are supporting a sustainable planet.  Chemical fertilizers, herbicides, and pesticides create a nightmare of chemical dependence.
