There seems to be a misprint or two in the latest “Teach Yourself Modern Persian” by Narguess (actually نرگس narges i.e. narcissus) Farzad. (Incidentally, what exactly does Farza:d mean? “Born in dignity and honour” as I was once told?)
This is from her verb list, page 138:
to flee, escape, run away
Infinitive:
گُریختن
Pronunciation:
rikhtan
Present Stem:
گُریز
Now, I don’t know if there is a verb گُریختن - میگُریزم meaning to run away – is there? But isn’t she confusing it with ریختن - میریزم meaning to pour?
Narguess follows this with:
to weep, cry
Infinitive:
گریستن
Pronunciation:
geristan
Present Stem:
گری
Whereas I don’t doubt this bit, I did want to check the pronunciation of this verb as it somehow seems a bit unusual – is it indeed geristan (infinitive) and migeryam (1st person present)?

The meaning of Farzad is what you said. “Far” means dignity, glory and magnificence. To be precise, before islam, it meant the aegis of God protecting and supporting select people especially kings.
گریختن (go ri:kh tan)= to escape = فرار کردن
گریز (go ri:z) is its present stem as you said and می گریزم (mi: go ri: zam) means I escape.
Less formal word for escape is فرارکردن
گریختن has nothing to do with ریختن which means to pour.
About the pronunciation of geri:stan and mi:geriam you are 100% right.
