This is a word that I still have trouble understanding.
What is its basic meaning, please? Why is it used in girls' names such as شهناز (I believe the شه part is an intensifier, is that right?)
Does نازنین mean someone who has ناز?

ناز as a noun means flirtation and coquetry. But it is often used instead of نازنین which means one who possesses ناز. And نازنین or ناز as adjectives express the one who flirts, is quite cute, very attractive and somehow delicate, sensitive and fragile in emotions, all mixed together!
نازنین is right at the opposite point of harshness of a strong rough man.
So, ناز mainly is a noun. But it is used as an adjective instead of نازنین holding all its significances.
And finally, نازنین as an adjective sometimes is used as a noun which does not mean ناز this time.
I think this is a little bit complicated. Let's see the examples:
از چشمانش ناز میبارید.
Here, ناز is used as a noun meaning coquetry. This sentence means: It was pouring coquetry from her eyes.
معشوقهی من دختر نازنینی است.
Here, نازنین is used as an adjective for دختر. This sentence means: My sweet heart is a "näzanin" girl. You can also say:
معشوقهی من دختر نازی است.
Here, ناز has come instead of نازنین and has made an adjective. The translation hasn't changed.
نازنین من نمیداند که چقدر دوستش دارم.
Here, نازنین has made a noun; but this noun does not mean coquetry. It is called in Persian: "صفت جانشین اسم". An adjective has been placed instead of a noun. There might have been a "معشوقه" before "نازنین" that has been omitted. The sentence might have been something like: "معشوقهی نازنین من نمیداند که چقدر دوستش دارم". Or you can replace "معشوقه" with any of your own desirable word. Translation: My "näzanin" is not aware of how much I love her.
By the way, I hope you have realized why it is used in girls' names.
Also, ناز has another meaning. In the case, it means luxury and super-easing facility. Of course here ناز usually comes next to another word. For example: "ناز و نعمت", "ناز و تنعم"
And as far as I know, شهناز had been originally شهرناز in "Shahname" of Ferdosi. So your theory about an intensifying "شه" looks wrong.
