Question I'm restoring an 1880's historical building in southern arizona and I want to put
flock wallpaper on the inside but I've heard from a few people that you shouldn't
wallpaper on the exterior walls of adobe buildings.... Is this true? and why?

I am sorry but I have to admit that I don't know for sure.
We do not have a system the same as Adobe in the UK mainly because of our climate !!!!
It does strike me from my own knowledge that if an external wall has no insulation then wallpaper adhesive will have difficulty in remaining solid.
The best advice I could give is to contact the manufacturers.
