Party Planning - Cocktail Hour Before My Wedding Reception

Question
I am having a cocktail hour before a four-hour wedding reception being held in New Orleans, Louisiana, in October.  During this hour, I would like to have light hor derves (spell).  I am expecting between 200 to 250 people at this cocktail hour.  My goal isn't to fill them up as we have paid a fortune for the reception.  I do, however, think it's only appropriate to have munches during this hour.  First question is how many hor derves per person should I have?  How much liquor is appropriate for this time frame?  What's good to serve when you don't want the headache of keeping food hot?  HELP!!!

Dear Sherry:

I usually defer these food and beverage questions to the caterer being used, who would have complete knowledge of the dinner menu, etc.  However, when a caterer is not in the plan I have found the following links to be very helpful.
