Question
Hi-

I am hosting a wedding for 75 people. The food is Authentic Mexican.  I will be serving Flank steak, Shredded Chicken, and Shrimp for Fajitas.  My question is do I need the same exact amt in terms of pounds for each station?  For example: For ppl to have at least 1-3 fajitas (steak)- I would need 20lbs of flank steak.  Do  I need 20lbs of chicken and shrimp?  Or can I get 10lbs of each?

Since I am a planner and not a caterer I always defer to my favorite food and beverage links when I have a question like yours.  I am certain that you will find your answer on one of the sites.
