Question I am giving a 90th birthday party brunch, after church, for 125-130 people, many elderly. Serving chicken filled croissants, small rolls with sliced ham, seafood pasta salad, wraps with various fillings, fresh fruit, vegetable tray, cake, coffee, punch.I would appreciate help with amount of each to prepare. I live a great distance from location and will fly in to do this. I plan to use purchased chicken salad and seafood salad, as bases, from Sam's Club as well as their baked goods. Thank you, Mary

Since I am a total event planner and producer, I engage the services of all the experts such as the caterer and let them do their magic with menu items, quantities, etc. so I am not exactly an expert in food quantities. You might find that Sam's club has such an expert on hand.
