This is from a personal email on a sensitive matter so I think it would be indiscrete to quote a lot of it but do you have an idiom like the following?
ما می گوييم گيريم حرف شما درست و
I.e. ‘Let’s assume that you are right and…’
Perhaps you could give some examples? What is this word گيريم?

It is simple.
ما می گوييم گيريم حرف شما درست و : We say lets assume you are right and
Important part is: گيريم حرف شما درست = lets assume you are right
گیریم: let's assume, take it
گیریم is short form of of فرض می گیریم or فرض می کنیم (we assume [that])
It is not an idiom. It is a two part verb (فرض کردن , to assume)

Just a quick check on this point: re گيريم حرف شما درست wouldn't it be better to have another verb i.e. است - so perhaps گيريم حرف شما درسته would be better?

است has been omitted. You can either wriote درسته، درست است، درست
All are correct
درست است is formal. The rest are informal.
