I do not make recommendations about brands or models, and I am not a camera technician so I may not be able to tell you what is wrong with your equipment if it`s not working .
I also know a little about digital photography and imaging with scanners and digital cameras, so ask me and I will answer if I can.

I have been seriously involved in photography for over 25 years, including about 4 years as a professional, as well as 2 years providing administrative service to government photographers, requiring interpreting photographers' requirements and trade technicalities for those unfamiliar with such.
I have successfully trained several beginners in photography, helping them to become competent in basic techniques.

None at present, but have been in about 4 camera clubs, having won or had placings in 2 club competitions.

Question I find this quite bizarre and not sure if this is what it is called.
Our house in France has window shutters and in the back upstairs room when the shutters are shut but windows open to the inside we get a reflection from the sun which projects an image of the patio below and the table and chairs that are placed around it including the bushes that climb up the surrounding iron wrought fence that perimeter the patio. At the bottom of the shutter when it is closed is a small hole and the reflection projects onto the ceiling when the room is dark to an incredible picture. I have kept an eye on it and it changes as the sun falls.
Would it be possible to set up a camera and take a photo as I feel it would be an interesting project.
Also have you heard of this happening anywhere?

Answer I think you might mean camera obscurA, unless there was a pun in there which I didn't get.
Anyhow, not sure your phenomenon, as interesting as it is, would quite fit into this category. Don't know if there would even be a name for such a situation.
To answer your second question, yes I think it would be possible to get a shot of it. Depending on how long the reflection lasts on the ceiling, (5 minutes, 10 minutes ?) maybe a time lapse sequence with an exposure every, say 1 minute, could be effective.
I dare say, if your camera allows, you might need to determine and set exposure controls manually instead of auto, but experiment.
