A person could escape Earth's gravity at 1 m/s with an acceleration of 0 m/s^2 (thrust canceling gravity). But it would take a long time.



The concept of escape velocity is different from what you are proposing. It is the speed you would have to give an object during a brief engine burn so that momentum would carry the object away.
