Answer
Hi Jim,

Sorry I cannot give you a step-by-step, as I have never seen one of these planes, and the pictures I found on the Internet don't show me too much. Hopefully, you received an instruction manual, but it appears not to have helped.

I'm not sure what you mean, by "stay in trim."  A plane will always change the pitch attitude (nose up/nose down) when the power is changed.

I read a review of this, or a similar plane, where the "anti-crash" feature made it much, much harder to fly, so the reviewer, a seasoned RC pilot and his son, the student, turned that "feature" off and the plane became much easier to manage.
I would suggest that you seek out the advice of an RC pilot in your area.  Go to a local hobby shop and ask how you might contact one.  Nothing is better than real, live help, and it will be free, so just ask.  You could even ask at the hobby shop where you purchased your plane.

You might find this review useful:

or maybe this one:

Just as an aside, there is never any need to pay the volunteers on All Experts.  We love our knowledge areas, and love helping others.

Sorry I couldn't have been more help, but the above linked articles should help.

Sincerely,
Ken
