I would appreciate your help in how I should list my math skills on a resume.  After college, I studied math and statistics, but not though a college.  To further my math skills, I took non-credit online courses, watched video lectures, and studied workbooks.  Could I mention math as one of my interests/activities?

Interests and activities are not put on the actual resume.  You can mention them in the cover letter.

Simply list the online courses you took on the resume under the section:  Educational Background.  Be specific with the dates and names of those courses.
