This could be a metabolic problem such as diabetes or kidney disease. A blood test would be helpful in diagnosing these but getting blood from a rat can be quite stressful. I would start by collecting a urine sample to at least check for increased glucose(diabetes) or increased protein (which can indicate kidney disease)
